Our fifth annual Vancouver World Chef Exchange! We’ve reached out to our friends in the global culinary community and have invited them to Vancouver. The result? Five of the world’s culinary best join us for a series of delicious collaborations with our own city’s top talent.
An all female, all star east coast meets west coast seafood dinner and wine pairings. Chef Charlotte Langley (East Coast) and Chef Shelome Bouvette combine forces to bring a multi-course seafood journey paired with wines from West Coast winemaker Heidi Noble (Joie Farms Winery, Naramata).
About Chef Shelome Bouvette
Chef Shelome Bouvette is the owner and Executive Chef of Chicha Restaurant and a member of the highly regarded, Les Dames Escoffier BC Chapter, an invitational organization of women leaders in food, beverage and hospitality.
Chef Bouvette trained at the city’s most innovative restaurants including Bin 942, Delilah’s, Allegro, and Ballantine’ before taking a leading role as the Executive Chef at Lolita’s South of the Border Mexican Cantina.
Shelome carved a niche in the city with her signature take on West Coast and Latin fusion. Today she continues to expand her love of Latin flavours and fresh, local west coast ingredients through her Peruvian menu at East Vancouver’s Chicha Restaurant.
About Chef Charlotte Langley

Never bound by titles or labels, Chef Charlotte Langley is constantly reinventing herself and what it means to be a chef, curator, entrepreneur, ambassador for sustainability and champion of the people and causes she believes in.
Hailing from PEI, Canada, Charlotte embodies what her peers often call “Maritime Chic” – a love for honest food shared with warmth, charm and that famed East Coast hospitality that has chefs, farmers, restaurants, collaborators and clients across provinces and borders knocking on her door.
Over 10 years working with seafood in restaurants like C (Vancouver), Whalesbone (Ottawa), Catch and Rodney’s (Toronto) has guided her expertise in seafood and led her to create the country’s first fresh canned seafood company Scout Canning.
